Where a bag beats a pouch
A carbon pouch handles smell through a filter layer, and that layer saturates over time. A properly sealed bag has no odour path at all while it is closed. For anything that gets sealed and then left alone β portioning, freezing, posting a sample to yourself β the bag is the better mechanism, and it is the cheaper one by an order of magnitude.
What they will not do
A bag is not rigid, so it protects nothing from being crushed, and it holds no humidity level of its own. Long-term storage still belongs in a jar β see Keep It Fresh. Where these earn their place is between the jar and the pocket.
